Mini food are all the rage right now so I took this Potato Skin Recipe from Simply Recipes and made it bite sized with mini potatoes I found at Walmart. These were a huge hit and an easy to eat party food!
My friend Erin’s Black Bean Dip is one of my favorite party foods and every bite always gets eaten up! I don’t have the exact measurements, because I watched her make the recipe and didn’t write it down.
Erin’s Black Bean Dip
One can of black beans, rinsed and drained
Half a can of mexi-corn, drained
Chopped cilantro
Chopped jalapenos
Chopped Tomatoes
Chunked Avocados
Limes (the juice keeps the Avocados from turning brown)
Mix the black beans and corn together, stir in cilantro and jalapenos, add some black pepper and a little salt. Put it in the fridge to marinate for awhile. 20 minutes before your guest arrive, chop and de-seed your tomatoes, cut avocados into small chunks and squeeze fresh limes over the top. Add to bowl and lightly stir. (you dont want to stir too much, because your avocados will get mushy) Serve with corn and blue tortilla chips!

Bellavitano Cheeses are SOOOO delish! Balsamic Bellavitano is my favorite but my wine drinking friends SWOON over the Merlot cheese too. Boursin cheeses ( I buy it at Target) are spreadable and delish on EVERYTHING. (most often I eat it with apple slices) Toasted Naan bread is always a big hit and since I don’t eat gluten I LOVE The Crunchmaster Crackers. (you can get them at Target, Sprouts & Walmart)

Teriyaki Tri Tip Skewers
Teriyaki Sauce:
Ingredients
1/2 cup low-sodium soy sauce
1/4 cup water
2 tablespoons rice vinegar
3 tablespoons brown sugar3 cloves garlic, minced
2 teaspoons minced fresh ginger
2 teaspoons cornstarch
1 pinch red pepper flakes (optional)
1½ pounds Wellborn 2R tri-tipSlice the Tri Tip against the grain in 1/4″ thickness, then marinate for an hour or overnight in your favorite teriyaki sauce
Skewer the meat strips and then grill for about 3 minutes on each side. Spice it up or down as much as you like with red pepper flakes.
While you are at the grill – make some watermelon, pineapple and mango kabobs, sprinkle with salt, chili powder and lime juice and grill them alongside the Tri Tip.
Pro tip from our butcher Carl: Tri-tip beef has two different grain directions. Locate where they intersect and cut vertically at the intersection point, which makes it easier to slice against the grain properly.
